Baby Potatoes with Dill and Horseradish Aioli

Ingredients
Potatoes
- 2 lb Baby Potatoes
- 1 Red Onion sliced into thin wedges
- 1/2 C Chicken Stock
- 2 Garlic Cloves minced
- 1/2 tsp Smoked Paprika
- 2 Green Onions finely chopped
- 1/4 tsp Salt
Dill and Horseradish Aioli
- 8 oz Sour Cream
- 1 Tb Prepared Horseradish
- 1 Tb Onion finely chopped
- 1 tsp Dried Dill
- 2 Garlic Cloves minced
- 1/2 tsp Salt

Instructions
Potatoes
- Place the Potatoes and onions in the Crockpot. Whisk together the Stock, Garlic and Paprika. Por over the Potatoes and cook on low for 6-7 hours or on high for 3 hours
- Place the Potatoes in a serving bowl. Toss with the Green Onions, Salt and Pepper
Dill and Horseradish Aioli
- Whisk together the Sour Cream, Horseradish, Onion, Dill, Garlic and Salt. Chill until ready to serve
