When the Food Network Show Food Truck Road Trip was here a couple weeks ago I met the crew of the Mobile Moo Shu Truck and tried one of their dishes at the Elimination segment of the Show. A BulgoGi Taco. It was good. On their Facebook Page I saw an Image of a dish described as "Panko crusted shrimp, garlic coconut cream sauce, spicy mint and basil mango salsa, served on a bed of rice!" So I decided to take that as an inspiration and create something similar.

This is made with inexpensive fake krab but of course could be made with good lump crab meat.

We love a good fish taco so I decided to come up with my own take on this classic.
Restaurant fish tacos are either grilled or breaded and their breading is too often on the heavy handed side (it’s not Fish and Chips for crying out loud) so I went with a panko covering to give the crispiness we like from the fried preparation while still getting more of the lightness that a grilled piece gives you.
