Preheat Oven to 350.
Spray a 9×4″ loaf pan with cooking spray
Combine the bananas, eggs, sugar, coconut oil, yogurt and the rum and vanilla extracts. Let the bananas still have some pulp or texture.
In another bowl whisk together the flour, baking powder and salt
Pour the wet mix into the dry mix and stir until mostly smooth. You still want the bananas to have a little bit of pulp
Pour the batter in the baking pan and bake until golden brown and a knife inserted in the middle comes out clean.
About 1 to 1.5 hours
Glaze
Melt the butter in a sauce pan over medium heat. Add the Brown sugar and water. Stir and continue to cook until the sugar is dissolved. Reduce to low heat and for another 5 minutes or until the mixture bubbles around the edges
Remove from heat and stir in the rum extract and the Orange Zest
Slowly pour half the glaze over the Bread. Allow it to seep into all the surfaces. Wait for it to be absorbed, about 30 minutes.
Remove the bread from the pan, slice and serve either plain or with Vanilla Ice Cream with some of the reserved Glaze drizzled on top.
