Heat a large skillet over medium-high heat. Stir in the Curry Paste for about 10 seconds. Then whisk in the Coconut Milk, Nutmeg, Clove and add the Cinnamon Stick.
Once combined increase the temp to High and add the Beef breaking it up into smaller pieces. Bring to a boil and continue cooking until the Beef is cooked through. About 7 minutes.
Reduce the heat and allow the Beef mixture to simmer for 20 minutes while the Rice finishes cooking. When down remove from the heat and discard the Cinnamon Stick
Serve the Beef mixture over Rice and top with Cucumber, Cabbage, Shallot, Jalapeno. Place a Lime wedge on the side to squeeze
