Place the Meat, Coconut Milk, coconut Water, Lime Juice, Carrots, Soy Sauce, Thai Seasoning and salt in a Pot. Bring to a boil then cover, reduce heat to a simmer and allow to cook for 8-10 minutes until the carrots are tender yet still crisp. Serve the Soup over Rice and garnished with Cilantro
Rice
Place the Rice, Coconut Water and the Vinegar in a pot. Bring to a boil then cover, reduce heat to a simmer and allow to cook for 18 minutes.
Uncover, remove from heat, stir in the Red Bell Pepper and allow to stand for 3 minutes
