Combine the Cottage Cheese, Eggs, Agave and Salt in a medium size mixing bowl. Blend until smooth with an immersion blender
Whisk in the Melted Butter and Flour (until just blended. don’t overmix) then stir in the Corn Kernels
Heat pan over Med-High heat. Coat with a pat of butter. Add 1/4 C of the batter and cook the cakes about 3-4 minutes per side in batches of 3-4 cakes. Place the completed cakes on a pan in the oven heated to 200 degrees to keep them warm.
