Over Medium heat melt 2 Tb butter in a Sauce pan and add the Onion rings. Season with a little Salt and Pepper. Stir to sweat them down until soft. about 15 minutes
In a small bowl mix the Ketchup, Red Wine Vinegar, Sugar and Hot Sauce
When the Onions are done stir the sauce in and allow to continue cooking for about 3 more minutes
Serve the Dogs with some Mild English Mustard, topped with the Onions and a sprinkling of chopped Cilantro
