  1. Seperate the lettuce leaves. Rinse and dry them and store in the fridge in a container between sheets of paper towel to wick away excess moisture until ready to serve.
  2. In a small bowl whisk together the Chicken stock, Soy Sauce, Brown Sugar and Corn Starch. Set aside
  3. Peel and dice the Carrot and seed and dice the Bell Pepper. Set aside
  4. Add the oil to a large skillet and bring to heat over medium-high. Break up the Turkey and place it in the skillet. Once the meat starts to brown break it up further into smaller pieces.
  5. When the meat is browned add the diced Carrot, diced Bell Pepper, Garlic and Ginger. Cook for 5 minutes
  6. Stir the broth in the meat mixture and continue to cook for another 3 minutes to allow the sauce to thicken
  7. Place the meat mixture on a lettuce leaf. Top with a sprinkling of Green Onions and a drizzle of Sriracha
