Combine the Egg, Bread Crumbs, 1 TB Soy Sauce and the minced Garlic. Form into 2 oz Meatballs (will make 9)
Heat a skillet with the Peanut Oil over Medium-High heat and cook the meatballs until brown on all sides. Remove from the pan and keep warm
Place the Carrots, Daikon, Onion, Brown Sugar, Sriracha and the remaining 2 TB of Soy Sauce in the Skillet and cook until tender.
Nestle the Meatballs back into the skillet covering them with the cooked veggies and the sauce. Allow to simmer for 10 minutes
Slice the Sub Rolls (removing some of the bread) place a layer of the cooked Veggies and then 3 Meatballs and top it with some of the sliced Jalapeno, Cilantro, Cucumber and Green Onions.

Could also serve the Meatballs on a bed of Rice instead of a Sub sandwich roll
