Instructions
Heat the oil in a large skillet over medium heat. Cook the Onion, Jalapeno and garlic for about 3 minutes until the onions are tender.
Stir in the Tomatoes, Mushrooms, Olives and seasonings. Bring to a boil
Create pockets in the tomato mixture for the fish fillets then spoon the mixture over them.
Once the mixture starts to boil again turn the heat down and cover the pan to allow the Fish to simmer for about 10 minutes
