Crab Salad Roll

Name: Crab Salad Roll
Ingredients: 1/4 C Mayo; 1/4 C Olive Oil; 1 tsp Paprika; 1 tsp Dijon Mustard; 1 Tb Chives (chopped); Pinch Cayenne Pepper; 1/2 Lemon Juice; 16 oz Flake crabmeat; 1/2 Pint Cherry Tomatoes (halved); 1 Avocado (pitted and cubed); 1 Mango (cubed); 4 Kaiser rolls

This is made with inexpensive fake krab but of course could be made with good lump crab meat.

1/4 C Olive Oil
1 tsp Paprika
1 tsp Dijon Mustard
1 Tb Chives chopped
Pinch Cayenne Pepper
1/2 Lemon Juice
16 oz Flake crabmeat
1/2 Pint Cherry Tomatoes halved
1 Avocado pitted and cubed
1 Mango cubed
4 Kaiser rolls

Instructions

Whisk together: Mayo, olive pil, paprika, mustard, chives, cayenne and the lemon juice until smoth Fold in with a spatula the crabmeat, tomatoes, avocado and mango. Set aside
Cut the Kaiser rolls in half and scrape out the bread in the middle Spread on the crab mixture and serve
