Lettuce Wraps

Ingredients
- 1 Bibb or Boston Lettuce
- 1/2 C Chicken Stock
- 1/4 C Soy Sauce
- 2 Tb Light Brown Sugar
- 1 Tb Corn Starch
- 2 Tb Vegetable Oil
- 2 Lbs Ground Turkey
- 1 Red Bell Pepper small dice
- 1 large Carrot small dice
- 2 Garlic Cloves minced
- 1 Tb Ginger minced
- 1/4 C Green Onion finely sliced (green parts only)

Instructions
- Seperate the lettuce leaves. Rinse and dry them and store in the fridge in a container between sheets of paper towel to wick away excess moisture until ready to serve.
- In a small bowl whisk together the Chicken stock, Soy Sauce, Brown Sugar and Corn Starch. Set aside
- Peel and dice the Carrot and seed and dice the Bell Pepper. Set aside
- Add the oil to a large skillet and bring to heat over medium-high. Break up the Turkey and place it in the skillet. Once the meat starts to brown break it up further into smaller pieces.
- When the meat is browned add the diced Carrot, diced Bell Pepper, Garlic and Ginger. Cook for 5 minutes
- Stir the broth in the meat mixture and continue to cook for another 3 minutes to allow the sauce to thicken
- Place the meat mixture on a lettuce leaf. Top with a sprinkling of Green Onions and a drizzle of Sriracha
