Banana Bread with an Orange Rum Glaze

Ingredients

- 4 Bananas ripe
- 2 Eggs
- 1 C Sugar
- 1/2 C Coconut Oil
- 3 Tb Yogurt Plain
- 1 tsp Rum Extract
- 1 tsp Vanilla Extract
- 2 C Flour
- 1 tsp Baking Powder
- 1/4 tsp Salt
Glaze
- 4 Tb Unsalted Butter
- 1/2 C Dark Brown Sugar
- 1 tsp Rum Extract
- 1/2 C Water
- 1 Orange Zest

- Preheat Oven to 350. Spray a 9x4" loaf pan with cooking spray
- Pour the wet mix into the dry mix and stir until mostly smooth. You still want the bananas to have a little bit of pulp Pour the batter in the baking pan and bake until golden brown and a knife inserted in the middle comes out clean. About 1 to 1.5 hours
Glaze
- Melt the butter in a sauce pan over medium heat. Add the Brown sugar and water. Stir and continue to cook until the sugar is dissolved. Reduce to low heat and for another 5 minutes or until the mixture bubbles around the edges Remove from heat and stir in the rum extract and the Orange Zest
