Coconut Curry Beef with Veggies over Rice

Ingredients
- 3 Tb Red Curry Paste
- 1 Canned Coconut Milk unsweetend
- 1 Cinnamon Stick
- 1/4 tsp Nutmeg
- 1/8 tsp Ground Cloves
- 1 lb Lean Ground Beef as lean as you can get
- 1 English Cucumbers sliced thin
- 1 Cabbage thinly shredded or sliced
- 1 Shallot thinly sliced
- 1 Jalapeno thinly sliced
- Rice Cooked

Instructions
- Start cooking the Rice
- Heat a large skillet over medium-high heat. Stir in the Curry Paste for about 10 seconds. Then whisk in the Coconut Milk, Nutmeg, Clove and add the Cinnamon Stick.
- Once combined increase the temp to High and add the Beef breaking it up into smaller pieces. Bring to a boil and continue cooking until the Beef is cooked through. About 7 minutes.
- Reduce the heat and allow the Beef mixture to simmer for 20 minutes while the Rice finishes cooking. When down remove from the heat and discard the Cinnamon Stick
- Serve the Beef mixture over Rice and top with Cucumber, Cabbage, Shallot, Jalapeno. Place a Lime wedge on the side to squeeze
