Coconut Lime Chicken Soup over Coconut Rice

Ingredients

- 1 Rotisserie Chicken meat shredded
- 1 Can Canned Coconut Milk unsweetened
- 2 C Coconut Water
- 1/4 C Lime Juice
- 3 Carrots sliced thin
- 1 Tb Soy Sauce
- 2 tsp Thai Seasoning
- 1/4 tsp Salt
Rice
- 1.5 C Calrose Rice
- 2.5 C Coconut Water
- 1 Tb Rice Vinegar
- 1 Red Bell Pepper diced

Soup
- Place the Meat, Coconut Milk, coconut Water, Lime Juice, Carrots, Soy Sauce, Thai Seasoning and salt in a Pot. Bring to a boil then cover, reduce heat to a simmer and allow to cook for 8-10 minutes until the carrots are tender yet still crisp. Serve the Soup over Rice and garnished with Cilantro
Rice
- Place the Rice, Coconut Water and the Vinegar in a pot. Bring to a boil then cover, reduce heat to a simmer and allow to cook for 18 minutes.
- Uncover, remove from heat, stir in the Red Bell Pepper and allow to stand for 3 minutes
