Corn Pancakes

Ingredients
- 1 C Cottage Cheese
- 3 Eggs
- 1 Tb Agave Nectar
- 1/2 tsp Cayenne Pepper
- 1 1/2 tsp Salt
- 1/2 stick Butter melted
- 1/3 C Flour
- 3 ears Fresh Corn cut off the kernels

Instructions
- Combine the Cottage Cheese, Eggs, Agave and Salt in a medium size mixing bowl. Blend until smooth with an immersion blender
- Whisk in the Melted Butter and Flour (until just blended. don't overmix) then stir in the Corn Kernels
- Heat pan over Med-High heat. Coat with a pat of butter. Add 1/4 C of the batter and cook the cakes about 3-4 minutes per side in batches of 3-4 cakes. Place the completed cakes on a pan in the oven heated to 200 degrees to keep them warm.
Recipe Notes
They go well with some spicy sausage (pictured with Habanero Pepper Sausage) and a drizzle of Maple Syrup.
