Creamy Mexican Chicken
Filling and of course easy since it is prepared in a crockpot

Ingredients
- 4 Chicken Breasts boneless, skinless
- 1 med Onion quatered and thinly sliced
- 1 Can Cream of Chicken Soup
- 1 Can Rotel Diced Tomatoes & Green Chilies
- 8 oz Velveeta Cheese

Instructions
- Place the chicken breats in a crockpot and add the Onion, Cream of Chicken Soup and the Rotel. Cook on High for 3-4 hours (or low 6-8)
- Remove the chicken to a cutting board to break apart. Return the chicken to the crockpot. Add the Velveeta and allow to cook for another 10 minutes to melt the cheese Salt and Pepper to taste
- Serve over cooked spaghetti or rice
