Creamy Taquitos and Green Chilie Sauce

Ingredients

- Baked Potatoes 24 oz Store bought
- 1 lb Lean Ground Beef
- 1 McCormick “Regular Taco Seasoning
- 1 Jalapeno Pepper seeded and finely diced
- 2 Tb Cilantro chopped
- 1 Green Onion diced
- 1/2 tsp Salt
- Corn Tortillas
Green Chilie Sauce
- 2 Diced Green Chilies 4 oz cans
- 15 oz Mexican Creme
- 4 Tb Cilantro chopped
- 1 tsp Salt
- 1 tsp Black Pepper

Instructions
- Microwave the Potatoes per the package instructions
- Cook the Ground Beef per the instructions on the Taco Seasoning packet
- In a bowl combine the Mashed Potatoes, Ground Beef, Jalapeno, Cilantro, Green Onion and Salt. Allow to cool
- Give a stack of the Corn Tortillas a quick 20 second heating in the microwave to make them pliable. Then place 2 Tb of the potato mixture just offset from center on a Tortilla and roll up. Secure with a toothpick. Repeat until the mixture has been used. About 12-15 rolled taquitos
- Heat enough oil in a pan to allow the Taquitos to be shallow fried. Cook them in the hot oil about 3 minutes per side then move them to a paper towel lined plate to drain.
Green Chilie Sauce
- Combine the Green Chilies, Mexican Creme, Cilantro, Salt and Pepper in a sauce pan. Stir and heat to a simmer.
Recipe Notes
Serve with a side of Refried Beans topped with shredded Cheese and Salsa
