Irish Guinness Beef Stew

Ingredients
- 4 Lb Beef Shortribs boneless or bone-in
- 3 Tb Olive Oil
- Salt
- Pepper
- 1 Large Yellow Onion diced
- 3 Garlic Cloves minced
- 6 Carrots diced into 1/2" pieces
- 2 Celery stalk diced into 1/2" pieces
- 1 Guinness Beer
- 1 C Beef Stock
- Fresh Parsley Flat leaf, chopped

Instructions
- Heat olive oil in a large Dutch Oven over medium-high heat. Season both sides of the Beef with Salt and Pepper and brown both sides. About 5 minutes each. Place the browned meat in the crock pot
- Add the Onions and Garlic to the Dutch Oven and cook for about 2 minutes.
- Add the Carrots and Celery to the Onions and Garlic and cook for another 4 minutes
- Degalze the Dutch Oven with the Beef Stock and then pour the contents of the Dutch Oven (The Onons, Garlic, Carrots, Celery and Stock) over the beef in the Crock Pot. Pour the bottle of Guinness into the Crock Pot too. Season with 1 tsp each of Salt and Pepper.
- Cook on low for 8 hours. Serve with mashed potatoes and garnish with the chopped Parsley
