Maple Glazed Chicken Tenders and Sweet Potatoes

Ingredients
- 2 lb Chicken Breasts thin cut
- 2 tsp Montreal Steak Seasoning
- 6 Tb Butter
- 1/4 C Maple Syrup
- 1/4 tsp Crushed Red Pepper
- 2 Green Onions sliced

- For the Sweet Potatoes either make from Scratch or use some store bought Mashed Sweet Potatoes and cook them according to the directions
- Cut the Chicken Breasts into strips and toss with the Montreal Seasoning
- Heat a skillet over medium heat to melt 4 Tb of the butter (and preheat the oven to 195) then add the Chicken strips. Cook until no longer pink (about 3 minutes per side). Set aside on a foil lined sheet pan and place in the oven to keep them warm.
- Add the remaining 2 Tb Butter to the Pan. Stir in the Maple Syrup and the Crushed Red Pepper. Cook for about 2 minutes then stir in the Green Onions.
- Serve the Chicken strips over the mashed Sweet Potatoes and drizzle with the Maple Syrup sauce.
