Ingredients
- 1 Tb Coconut Oil
- 1/2 Onion finely diced
- 1/4 C Ham diced
- 1/2 Red Bell Pepper diced
- 1 Celery stalk diced
- 2 Tb Jalapeno finely diced
- 2 C Corn
- 2 tsp Fresh Thyme chopped
- 1 C Fire-Roasted Tomatoes (canned)
- 1/2 C Half-and-half
- 1/4 C Vegetable Stock
- 2 Tb Hot Sauce
- 1/2 C Fresh Parsley chopped

Instructions
- Heat the coconut oil in a large sauce pan over medium heat Add the Onions and cook until soft. about 3 min
- Add the ham, red pepper, celery and jalapeno. Cook until soft. About 2 minutes
- Add the Corn and thyme. Continue to cook, stirring occasionally for another 3 min.
- Stir in the tomatoes, half-and-half, vegetable stock and the hot sauce. Simmer for 15-20 minutes until the sauce has reduced and thickened
Recipe Notes
Serve with slices of nice crusty, toasted bread.
