Mini Meatloaf cupcakes with Spicy and Sweet BBQ
Make the meat mixture and the BBQ sauce the night before to give the flavors in the meat and the sauce time to meld.
They have a nice heat level so if you don’t tolerate heat that well leave out the Tabasco and maybe just use two Chipotle peppers instead of four

Meat Loaf
- 1/2 Onion Rough chopped
- 1 Red Bell Pepper Rough chopped
- 2 Garlic Cloves
- 2 Tb Butter
- 2 Lb Lean Ground Beef
- 1 Egg
- 2 tsp Worcestershire Sauce
- 1 C Panko Bread Crumbs
- 1/4 C Parmesan Cheese grated
BBQ Sauce
- 1 C Ketchup
- 4 Chipotle peppers
- 1 Tb Apple Cider Vinegar
- 1 tsp Tabasco
- 1 Tb Honey

Instructions
- If making the dish when prep is done preheat the oven to 350. Place the Onion, Bell Pepper and Garlic in a Food Processor and blend until smooth.
- Melt the butter in pan over medium-high heat and add the mixture from the Food Processor along with 1/2 tsp each of Salt and Black Pepper. Saute until the excess moisture has evaporated then remove from the heat to allow to cool
- In a bowl mix together the Ground Beef, Egg, Worcestershire, Bread crumbs Cheese and the cooled vegetable saute. form into Baseball-sized meat balls (4 oz) and place in a foil cupcake cup placed in a muffin tin.
- Mix the Ketchup, Chipotle peppers, Vinegar, Honey and Tabasco until well combined.
- Top each meatball with the BBQ glaze and bake in 350 degree oven for 30-35 minutes (looking for an internal temp of 160) Serve with additional sauce and topped with some mashed potatoes piped on top like frosting
Recipe Notes
Could also of course make this as a large meat loaf rather than the individual serving size but would need to bake it for 1.5 Hours
