Oven Roasted Fajitas
Easy to prep ahead of time meal. Let the Chicken, Spices and Onion marinate overnight.

Ingredients
- 1 lb Chicken Breasts boneless, skinless, cut into thin strips
- 2 T Vegetable Oil
- 2 tsp Chili Powder
- 1 1/2 tsp Cumin
- 1/2 tsp Garlic Powder
- 1/2 tsp Dried Oregano
- 1/4 ts Seasoned Salt
- 1 Can Rotel Diced Tomatoes & Green Chilies
- 1 Onion Sliced
- 1 Red Bell Pepper cut into strips
- 1 Green Bell Pepper cut into strips

Instructions
- Cut the chicken into thin strips and place into a bowl along with the Sliced Onions, Oil, Chili Powder, Cumin, Garlic Powder, Dried Oregano, and salt. Cover and place in the refrigerator overnight
- Heat oven to 400 degrees
- In a large pan place the chicken mixture that has been marinating along with the bell pepper strips and the can of Rotel. Stir and toss to throughly mix together.
Recipe Notes
Serve with corn tortillas, Mexican Creme, etc...
The dish shown also has a smear of the Avocado and Greek Yogurt dressing and a drizzle of fresh roasted Chili Verde
