Pork Meatball Banh Mi

Ingredients
- 1 Egg beaten
- 1/4 Bread Crumbs
- 3 Tb Soy Sauce
- 3 Garlic Cloves minced
- 1 Lb Ground Pork
- 1 Tb Peanut Oil
- 3 oz Carrots shredded
- 3 oz Daikon Radish shredded
- 1 Onion sliced thin
- 2 Tb Brown Sugar
- 2 tsp Sriracha
- 1 Jalapeno sliced thin
- 3 Tb Cilantro chopped
- 1 Cucumber shredded
- 2 Green Onions sliced

Instructions
- Combine the Egg, Bread Crumbs, 1 TB Soy Sauce and the minced Garlic. Form into 2 oz Meatballs (will make 9)
- Heat a skillet with the Peanut Oil over Medium-High heat and cook the meatballs until brown on all sides. Remove from the pan and keep warm
- Place the Carrots, Daikon, Onion, Brown Sugar, Sriracha and the remaining 2 TB of Soy Sauce in the Skillet and cook until tender.
- Nestle the Meatballs back into the skillet covering them with the cooked veggies and the sauce. Allow to simmer for 10 minutes
- Slice the Sub Rolls (removing some of the bread) place a layer of the cooked Veggies and then 3 Meatballs and top it with some of the sliced Jalapeno, Cilantro, Cucumber and Green Onions.
Recipe Notes
Could also serve the Meatballs on a bed of Rice instead of a Sub sandwich roll
