Salsa Verde Pork Mac-N-Cheese

- 12 oz Rigatoni
- 1 lb Pork Sausage
- 1 Onion Chopped
- 1 16 oz Salsa Verde 505 brand Hatch Green Chilie
- 16 oz Monterey Jack Cheese shredded

Instructions
- Cook the Pasta and then drain and set aside. Preheat oven to 350. Grease a 3 qt backing dish with cooking spray.
- Combine the Pork and Onion (season with salt and pepper) in a skillet on med-high until the meat is browned. Drain the fat then add the Salsa Verde.
- Place half the Pasta in the backing dish. Cover with half the Meat mixture then half the Cheese. Repeat the layers.
- Bake uncovered for 35 minutes than remove from oven to let rest for another 10 minutes
- Serve portions with garnishes of chapped Tomato, diced Avocado, petite diced Jalapeno and chopped Cilantro.

This sounds really good. It’s going on this week’s menu. Chapped tomatoes are hard to find, Dave! I’m going to use regular ones – LOL!
