Smoked Chorizo Meatloaf

Ingredients
- 1 lb 90/10 Ground Beef
- 1 lb Ground Pork
- 1/2 lb Chorizo
- 1 Tb Granulated Garlic
- 1 Tb Grandulated Onion
- 2 Tb Brown Sugar
- 1/2 C BBQ Sauce
- Cheddar Cheese shredded
- Cilantro chopped

Instructions
- Thoroughly mix the Ground Beef, Pork, Chorizo, Granulated Garlic, Granulated Onion, Brown Sugar and BBQ Sauce. Use a Stand mixer with the paddle attachment for about 5 minutes until the mixture is smooth
- Fill a 1.5 qt Loaf pan (5" x 9") with the mixture, cover tightly with foil and bake for 1 hour at 350
- After the loaf is done baking allow it to rest then remove the loaf from the pan and place on the grates of your smoker (temp about 200) for 45 minutes
- Remove the loaf from the smoker and cut it into 3/4" slices.
- Heat a frying pan over Medium-High and place the slices in the frying pan with a pat of butter under each slice. Cook until the it begins to crisp and caramelize.
- Turn over and and mop with some of the BBQ sauce. Top with shredded Cheese, add a splash of water to create some steam and cover to allow the Cheese to melt.
- Serve on a bed of Garlic Mashed Potatoes and garnish with some chopped Cilantro
Recipe Notes
Boiled 7-8 medium sized potatoes (skin on) with 1 tsp of Garlic Salt and 1 Tb of fresh minced Garlic added to the water. Drain, add 3 Tb of Butter along with 1/4 C of Milk. Mash to the consistency desired.
