Sweet and Sour Fried Rice

Ingredients
Fried Rice
- 1.5 C Calrose Rice
- 2.5 C Chicken Stock
- 2 Tb Rice Vinegar
- 2 Tb Vegetable Oil
- 1/4 C Onion Diced
- 4 Garlic Cloves Minced
- 1/2 Red Bell Pepper Diced
- 1 Carrot Diced
- 1 Jalapeno Finely Diced
- 5 Mushrooms Sliced
- 2 Tb Oyster Sauce
- 2 tsp Sesame Oil
- 3 Green Onions Diced
Sweet & Sour Sauce
- 1.25 C Water
- 1.25 C Pineapple Juice
- 1/2 C Sugar
- 6 Tb Soy Sauce
- 4 Tb Apple Cider Vinegar
- 1/2 Red Bell Pepper Chopped
- 1/4 English Cucumber Quartered and sliced thin
- 1 Carrot Sliced thin
- 1/2 20 oz Can Pineapple tidbits
- 1/2 Onion Chopped
- 1 C Baby Corn Chopped
- 2 Tb Potato Statch
- 2 Tb Water

Instructions
Fried Rice
- Place the Chicken Stock, Rice and Rice vinegar in a Pot. Bring to a boil then reduce the heat to 3 and cover. Allow to cook for 18 minutes. Then remove form the heat, stir and set aside While the Rice is Cooking prepare the Sweet and Sour Sauce
- Place the Onion, Garlic and Vegetable Oil in a large frying pan. Heat on high until they start to brown.
- Add the Red Bell Pepper, Carrot, Jalapeno and Mushrooms. Continue to stir-fry for another 3-4 minutes.
- Add the Rice and continue to stir-fry for 4-5 minutes
- Add the Oyster Sauce and continue to stir fry for 2-3 minutes. then remove from Heat, Stir in the Sesame Oil and garnish with Green Onion
Sweet & Sour Sauce
- Place the Water, Pineapple Juice, Sugar, Soy Sauce and Apple Cider Vinegar in a Sauce Pan. Heat on High until it boils. Reduce to Med-High and add the Carrot, Red Bell Pepper, Cucumber, Onion, Baby Corn and Pineapple. allow to continue to boil for 3 minutes.
- While the Sauce and Vegetables cook mix together the Potato Starch and Water.
- Stir in the Potato Starch slurry and allow the Sauce to thicken. Remove from Heat.
Recipe Notes
Serve garnished with more Green Onion and topped with some crispy fried Wontons for added texture
