Teriyaki Pork Cheesesteak with a Wasabi Broccoli Slaw.

Ingredients
- 1/2 C Soy Sauce
- 1/4 C Water
- 2 Tb Mirin
- 1.5 Tb Dark Brown Sugar
- 1/4 C Sugar
- 1.5 tsp Garlic minced
- 1.5 tsp Ginger Paste
- 2 Lb Pork Tenderloin Shaved or as thin as your Butcher can slice it
- 1 Yellow Onion Quartered and sliced
- 12 oz Broccoli Slaw
- 1/2 C Mayonnaise
- 4 Tb Rice Vinegar
- 3 tsp Prepared Wasabi
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 6 Sub Rolls sliced and remove some of the bread in the middle
- 12 slices Provolone Cheese

- In a bowl whisk together the Soy Sauce, Water, Mirin, Brown Sugar, Sugar, Garlic and Ginger Paste. Pour it into a gallon Ziplock bag containing the Sliced Pork and Onions. Combine well and place in the fridge for at least 2 hours
- In a bowl whisk together the Mayo, Rice Vinegar, Wasabi, Salt and Black Pepper. Pour it over the Broccoli Slaw in a Medium sizeed bowl. Combine well, cover and place in the fridge until service
- Heat a flattop type grill pan on high. Place a desired portion of the Meat and Onion mixture on the pan and stir/chop the mixture until cooked. Form the mixture into a line as long as your Sub Roll. Top with two slices of Cheese then place your Sub Roll over the top. Allow to cook for about 30 seconds to let the bun steam and the Cheese melt. Use your spatula to lift the meat and bread together.
- Top with some of the Wasabi Broccoli Slaw
