Tilapia Veracruz

Ingredients
- 4 6 oz Tilapia Filets or Snapper, Mahi, etc... Thawed
- 1 Tb Olive Oil
- 1 Onion Sliced into thin wedges
- 1 Jalapeno seeded and diced small
- 2 Garlic Cloves minced
- 1 14.5 oz Diced Tomaotes undrained
- 1 C Mushrooms sliced
- 3/4 C Pimiento-stuffed Green Olives quartered
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Mexican Oregano
- 1/2 tsp Cumin

Instructions
- Heat the oil in a large skillet over medium heat. Cook the Onion, Jalapeno and garlic for about 3 minutes until the onions are tender.
- Stir in the Tomatoes, Mushrooms, Olives and seasonings. Bring to a boil
- Create pockets in the tomato mixture for the fish fillets then spoon the mixture over them.
- Once the mixture starts to boil again turn the heat down and cover the pan to allow the Fish to simmer for about 10 minutes
